I want to do a picture with paragraph, but without the title. It appears that I cannot do this without having a big old empty space on top of the text and picture. Is there a way to get around this?

Just leave the Title blank. Published site does not have the same gap you see in the editor. If that does not help, try using multiple-columns element to place picture and text next to each other.
